Egg, Sausage, and Spinach Casserole

Most Amazing Breakfast Casserole (Whole30)

Bryce writes: This recipe is culled from many sources online, I guess you could say “research”. But it really is so unique and so much our own, that I wanted to write down the recipe. Boy, is it yummy….

Turkey Sausage:
2 lbs ground turkey
2 tsp parsley
2 tsp Italian seasoning
1 Tbs minced garlic
1 tsp onion powder
½ tsp fennel seed
1 ½ tsp black pepper
½ tsp paprika
1 ½ tsp red pepper flakes
2 tsp salt

Using clean hands combine spices & garlic with ground turkey, mixing well to combine. Refrigerate for at least 8 hours or overnight for flavors to marry together.

Turkey Sausage from above
12 organic free range eggs
1 10 oz package frozen spinach
1 14 oz can of diced tomatoes
1 4 oz can of green chiles, liquid included
1 medium onion, diced
1 tsp garlic, minced
1 Tbs dark mustard
1 tsp salt
½ tsp black pepper

Preheat the oven to 350-degrees. Brown the turkey sausage in a skillet over medium high heat, breaking up into small pieces. Don’t worry if the sausage does not fully cook, as it will finish in the oven. Grease a 13×9 glass baking dish with oil, and place cooked turkey sausage in bottom of the pan.

Add a little olive oil to the skillet and cook the onion for five minutes over medium heat. Add the garlic and cook for 1-2 minutes, making sure not to burn it. Reduce heat to low and add the package of frozen spinach, cut up into small cubes, allowing it to melt into the onions and garlic.

While the spinach is thawing in the pan, crack 12 eggs into a large mixing bowl and beat well. Stir in the  mustard, salt, pepper, diced tomatoes, and green chilis. Once spinach is defrosted into the onion & garlic mixture, add it to the egg mixture. Mix well. Pour the egg mixture over the turkey sausage just hanging out in the glass baking dish.

Bake for 40 minutes on the middle rack of the oven or until casserole is set in the middle and not runny. Remove from oven and cool for 30 minutes before covering and storing in the refrigerator. Can be refrigerated for up to a week. Makes 12-servings.

Bryce adds: We cut of a piece of the casserole every morning and pop it in the microwave for 3 minutes at 50% power. Usually pair it with half a grapefruit and black coffee. Such a great way to start the morning. Easy, fast, and filling. Recipe can be altered to a variety of taste profiles. We tried chorizo. We tried mexican (with chipotle peppers in the egg mixture). It’s a great palette to explore with. But the above recipe is far and away our favorite.
